Ce n&rsquo;\u00e9tait pas un cours de cuisine ordinaire, mais plut\u00f4t la premi\u00e8re ligne de d\u00e9fense contre le diab\u00e8te dans l&rsquo;une des villes les plus soucieuses de la sant\u00e9 au Canada.<\/p>\n<p>\u00ab\u00a0Mon m\u00e9decin m&rsquo;a dit que j&rsquo;\u00e9tais <strong>pr\u00e9diab\u00e9tique<\/strong> l&rsquo;ann\u00e9e derni\u00e8re,\u00a0\u00bb me confia Maria, une enseignante du primaire de 56 ans assise \u00e0 c\u00f4t\u00e9 de moi, pendant que nous coupions des carottes pour un rago\u00fbt. \u00ab\u00a0\u00c7a m&rsquo;a fait peur. Ma m\u00e8re a perdu la vue \u00e0 cause du diab\u00e8te avant de mourir.\u00a0\u00bb<\/p>\n<p>L&rsquo;histoire de Maria fait \u00e9cho partout au Canada, o\u00f9 environ <strong>11,7 millions<\/strong> de personnes vivent avec le diab\u00e8te ou le pr\u00e9diab\u00e8te. Selon <a href=\"https:\/\/www.diabetes.ca\" rel=\"nofollow noopener\" target=\"_blank\">Diab\u00e8te Canada<\/a>, ces chiffres ont doubl\u00e9 au cours des deux derni\u00e8res d\u00e9cennies, les co\u00fbts directs pour le syst\u00e8me de sant\u00e9 atteignant 30 milliards de dollars par ann\u00e9e. Derri\u00e8re ces statistiques se cachent des histoires de familles aux prises avec une condition qui transforme les rituels quotidiens\u2014comme pr\u00e9parer le souper\u2014en d\u00e9cisions m\u00e9dicales.<\/p>\n<p>L&rsquo;atelier de cuisine, dirig\u00e9 par Jessica Sault, di\u00e9t\u00e9ticienne Nuu-chah-nulth, se concentre sur la reconstruction des relations avec les aliments traditionnels et les habitudes alimentaires durables. \u00ab\u00a0Le diab\u00e8te n&rsquo;\u00e9tait pas courant dans les communaut\u00e9s autochtones avant la colonisation et l&rsquo;arriv\u00e9e des aliments transform\u00e9s,\u00a0\u00bb explique Sault tout en d\u00e9montrant comment pr\u00e9parer le saumon. \u00ab\u00a0La d\u00e9connexion des syst\u00e8mes alimentaires culturels a eu des cons\u00e9quences d\u00e9vastatrices.\u00a0\u00bb<\/p>\n<p>La crise du diab\u00e8te au Canada refl\u00e8te des changements soci\u00e9taux plus larges. Des environnements de plus en plus remplis d&rsquo;aliments ultra-transform\u00e9s, des quartiers d\u00e9pendants de l&rsquo;automobile et des horaires de travail stressants cr\u00e9ent ce que les experts en sant\u00e9 publique appellent des \u00ab\u00a0<strong>environnements ob\u00e9sog\u00e8nes<\/strong>\u00ab\u00a0\u2014des conditions o\u00f9 maintenir des habitudes saines devient difficile, quelle que soit la volont\u00e9 personnelle.<\/p>\n<p>Lors de ma visite dans la communaut\u00e9 de <a href=\"https:\/\/www.deaselake.com\" rel=\"nofollow noopener\" target=\"_blank\">Dease Lake<\/a>, dans le nord de la Colombie-Britannique l&rsquo;\u00e9t\u00e9 dernier, j&rsquo;ai \u00e9t\u00e9 t\u00e9moin de la fa\u00e7on dont la souverainet\u00e9 alimentaire influence les r\u00e9sultats de sant\u00e9.
